Super fresh and super flavourful, NicoCaara’s Kaffir lime cheesecake is our perfect kind of happy ending to every meal. What’s better: you don’t have to go the extra mile for it, you can do it all from the comfort of your kitchen.

You will need

1 cup cream cheese
⅓ cup fresh cream
5 teaspoon kaffir lime juice
1/2 teaspoon kaffie lime zest
3 teaspoon water
1 teaspoon gelatin

For meringue  

3 egg white
¾ cup caster sugar

For the sponge   

3 tablespoon melted butter
2 tablespoon milk
2 tablespoon caster sugar
½ cup flour
4 egg yolks

For the sponge


Add milk, melted butter, caster sugar, and flour in a steel bowl and mix until it’s smooth. Fold in the egg yolk and set aside.
Whisk the egg white and caster sugar with a balloon whisk until they make soft peaks.
Fold the two mixes together until they’ve combined.
Preheat the oven for 30 – 40 minutes.
Pour the mix into the cake ring, and use a water bath to bake the sponge at 160 degrees celsius.

For Kaffir lime Cheese cake mix


Bloom the gelatin (30 ml for grain gelatin) in chilled water. Line your cake tin with sponge. Add the cream cheese and fresh cheese in a steel bowl, use a double boiler to warm it until the cheese is smooth, add the gelatin to the mix, and set aside. Add the egg white and sugar in a mixing bowl, pop it on top of the double boiler, and keep whisking by hand until it’s warm. Then use a balloon whisk until it makes soft peaks. Fold meringue to the first mix until it combines properly and pour into the cake mold. Pop it into the chiller for 3 hours, after which you can take it out and garnish with fresh fruits, mint, mango, or any other garnish of your choice.
