Light and fresh, this fuss-free recipe from NicoCaara is like summer on a plate. It’s easy to make, easier to plate, and easiest to chow down in the company of friends.
You will need
3 rice paper sheets
A handful of spiralised carrot
A handful of spiralised beetroot
1 teaspoon sesame seed
1 teaspoon peanuts
½ cup firm tofu
1 teaspoon basil
1 teaspoon mint
1 tsp coriander leaves
2 teaspoon mixed herb salad
1 lemon
1/4 cup vermicelli noodles soaked in water
Pineapple dressing
2 teaspoon fresh pineapple juice
2 tablespoon soy sauce
½ teaspoon chopped red Thai chilli
Method
Soak the rice paper sheet in water for few seconds.
Marinate the carrot spiral and beetroot spiral in salt, pepper and lemon juice for few minutes.
Layer the sheet onto a chopping board and sprinkle sesame seeds.
Pile the marinated carrot and spiral beetroot.
Layer the tofu, vermicelli noodles, and the rest of the herbs.
Tightly wrap the rolls.
